Prawns in Chocolate sauce

蝦仔淋巧克力醬

 

Che-sī leng-goā chi̍t-chhut Se-pan-gâ ê tapas. Choè-hoat kan-tan, iōng liau koh chhù-bī, chiah-khí-lâi ū hái-sán ê chhiⁿ-tiⁿ, ū soàn-thâu kap hiam-kiuⁿ-á ê phang-bī, ū chi-ku-la̍t (chocolate) khó͘-tiⁿ-á khó͘-tiⁿ kap liú-teng phang-tiⁿ ê chhùi-bé.

這是另外一出西班牙的tapas. 做法簡單, 用料閣趣味, 食起來有海產的鮮甜, 有蒜頭及薟薑仔的芳味, 有巧克力苦甜仔苦甜及柳丁芳甜的嘴尾.

8 large raw prawns

8 bé ê toa-hê

8 尾的大蝦

 

1 tbsp seasoned plain flour

1 toa-thng-sî ê mī-hún, kiâm-tiⁿ-chham-hó

1 大湯匙的麵粉, 鹹甜摻好

 

1 tbsp pale dry sherry

1 toa-thng-sî ê sherry (soán chiú-sek khah chhián-e)

1 -湯匙 sherry (選酒色卡淺e)

 

Juice of 1 large orange

Chi̍t-liap liú-teng ê chiap

一粒柳丁的汁

 

15g dark (bittersweet) chocolate, chopped

15g ê o͘-chi-ku-la̍t (chocolate), chhiat-chhùi

15g的烏巧克力 (chocolate), 切碎

 

2 tbsp olive oil

2 toa-thng-sî ê kan-ná-iû

2大湯匙的橄欖油

 

2 garlic cloves, finely chopped

2 liap soàn-thâu chhiat-chhùi

2粒蒜頭, 切碎

 

1 in piece fresh root ginger, finely chopped

1 phìⁿ kiuⁿ, chhiat-iù

1片薑, 切幼

 

1 small dried chili, seeded and chopped

1 tiâu ta ê hiam-kiuⁿ-á, chí the̍h-tiàu

1條乾的薟(hiam)薑仔, 籽提掉

 

Salt and ground black pepper

Iâm kap o͘-hô͘-chio

烏胡椒

 

1. coat the prawns with the seasoned flour and set aside.

1. Hê-á ùn í-keng ū chham-kiâm-tiⁿ ê mī-hún, ùn-hó seng khǹg chi̍t-piⁿ

1. 蝦仔搵已經有摻鹹甜的麵粉, 搵好成khǹg一邊

 

2. gently heat the sherry and orange juice in a small pan. When warm, remove from the heat and stir in the chopped chocolate until melted

2. Iōng soè phah hoé ûn-ûn-á jia̍t sherry kap liú-teng-chiap.  Chha-put-to la-lûn-sio ê un-tō͘, koaiⁿ hoé, ka-ji̍p chhiat-hó ê chocolate, it-ti̍t lā kàu chocolate iûⁿ-khì

2. 用小phah火緩緩仔熱sherry(一種酒)及柳丁汁. 差不多拉圇燒的溫度, 關火, 加入切好的巧克力, 一直撓到巧克力溶去.

 

3. heat the oil in a frying pan. Add the garlic, ginger and chili and cook for 2 mnutes until golden. Remove with a slotted spoon and reserve. Add the prawns, cut side down and cook for 2-3 minutes until golden brown with pink edges. Turn the prawns and cook for a further 2 minutes

3. Tī tiáⁿ-lāi jia̍t iû, seng khǹg soàn-thâu, kiuⁿ, hiam-kiuⁿ-á lo̍h-khì khiàn-phang, tán piàn-sek (ū chi̍t-tiám-á o͘-thn̂g ê sek), the̍h-khí-lâi, mā-sī seng khǹg chi̍t-piⁿ.  Oāⁿ khǹg hê-á lo̍h-khì, chi̍t-piⁿ chian-ho͘-sek, chài-koh oāⁿ-piⁿ kè-sio̍k chian chha-put-to koh nn̄g hun-cheng.

3. 佇鼎內熱油, khǹg蒜頭, , ()薑仔落去掔芳, 等變色(有一點仔烏糖的色), 提起來, 嘛是成khǹg一邊. khǹg蝦仔落去, 一邊煎乎熟, 再閣換邊繼續煎, 差不多閣兩分鐘.

 

4. return the garlic mixture to the pan and pour the chocolate sauce over. Cook for 1 minute, turning the prawns to coat them in the glossy sauce. Season to taste and serve hot.

4. Kā tú-chiah khǹg chi̍t-piⁿ ê phang-liāu kap chocolate chiùⁿ tó-ji̍p, kè-sio̍k chú chi̍t hun-cheng chó-iū; choè-āu, chham-kiâm-tiⁿ. Oân-sêng.

4. Kā拄才khǹg一邊的香料及巧克力醬倒入, 繼續煮一分鐘左右; 最後, 摻鹹甜. 完成.
